Spicy Peanut-Lime Dressing
Punchy, tangy, a little spicy. Works on noodles, slaw, grain bowls, and raw veggies.

Ingredients
Original (with peanut butter)
- 4 Tbsp peanut butter
- 1 Tbsp soy sauce
- 2 Tbsp lime juice
- 1 Tbsp rice vinegar
- 1 tsp maple syrup
- 1 tsp sriracha
- 2 Tbsp warm water
Lower-fat version (with peanut butter powder)
- 4 Tbsp peanut butter powder
- 1 Tbsp soy sauce
- 2 Tbsp lime juice
- 1 Tbsp rice vinegar
- 1 tsp maple syrup
- 1 tsp sriracha
- 4 Tbsp warm water (double the original — start here, add more if needed)

Original: whisk everything together until smooth. Add a splash more warm water if you want it thinner.

Low-fat version: whisk peanut butter powder and water first into a smooth paste, then add the rest of the ingredients.
Notes & tips
- Keeps 5 days in the fridge. Firms up cold — whisk in warm water to loosen.
- The PB powder version tastes a touch less rich — a splash more maple syrup or a small drizzle of toasted sesame oil rounds it out.
