5-Minute Caesar Dressing
Creamy, garlicky, cheesy without any cheese. Hemp seeds and white beans do the heavy lifting.

Ingredients
- ¼ cup hemp seeds
- 1 can (~15 oz) cannellini beans, drained and rinsed
- 3 garlic cloves
- 2 Tbsp nutritional yeast
- ¼ cup unsweetened soy milk, plus more to thin
- 1 tsp lemon juice
- 1 tsp apple cider vinegar
- ½ tsp Dijon mustard
- Pinch of black pepper

Dump everything into one jar (wide-mouth jar or immersion blender cup). No need to mince the garlic — the blender handles it.

Blend until smooth — 30–60 seconds with an immersion blender. Tilt the jar slightly and move the blender up and down to incorporate everything.

Taste and adjust. Too thick? More soy milk. Need brightness? More lemon. More cheesy depth? More nutritional yeast. Punchier? More pepper.

Seal and store. Keeps in the fridge up to 5 days. It thickens as it sits — stir or shake before using, or thin with a splash of soy milk.
Notes & tips
- Equipment: immersion blender + wide-mouth jar makes this the easiest dressing in the rotation.
- Pour over chopped romaine with chickpea croutons and a sprinkle of hemp seeds.
