Easy Whole Food Plant Based Meals — For When I Have Zero Time or Energy

Keep things simple. With a few staples on hand, you can throw together a filling, tasty plant-based meal in minutes — no prep required.

Keep your food simple and easy

Keeping things simple is what helps me stick to this way of eating. Let's face it: we're all busy. On a good week, I've meal prepped a sauce, some grains and potatoes, veggies, and marinated some tofu. But sometimes there's no time for that, or I've already eaten my way through everything I prepped.

That's the moment that makes or breaks your week. The key to staying on track, and not caving to takeout or picking off your kids' (or someone else's) plate, is keeping things ridiculously simple. Simple, but still filling and tasty.

Always keep a few staples on hand so you can throw a meal together in a pinch:

  • Frozen veggies. So many frozen veggies.
  • Microwaveable rice
  • Canned beans
  • Potatoes
  • Jarred tomato sauce
  • Soy sauce or coconut aminos
  • Whole grain or bean pasta
  • Tofu
  • Flavor boosters and sauces you love. Mine are nutritional yeast, Frank's Original hot sauce, Credo cheese sauce, and from Trader Joe's, the Pepita salsa and sweet chili sauce.
