Creamy Caesar Salad with Air-Fried Tofu & Crispy Potatoes
~10 min active (plus make-ahead prep)Serves 2 as a main

Ingredients

Crispy potatoes

  • 2 medium russet potatoes, scrubbed and diced into bite-size cubes

Air-fried tofu

  • 1 block extra-firm tofu, pressed and cubed
  • 2–3 Tbsp nutritional yeast
  • A few good splashes of Frank's RedHot

Creamy Caesar dressing

  • ¼ cup hemp seeds
  • 1 can (~15 oz) cannellini beans, drained and rinsed
  • 3 garlic cloves
  • 2 Tbsp nutritional yeast
  • 1 tsp lemon juice
  • 1 tsp apple cider vinegar
  • ½ tsp Dijon mustard
  • Pinch of black pepper
  • ¼ cup unsweetened soy milk, plus more to thin

To assemble

  • Kale or romaine, chopped
  • Cucumber, chopped
  • Cherry tomatoes, halved

Instructions

  1. 1

Prep ahead — roast the potatoes: heat the oven (or air fryer) to 425°F. Spread the diced potatoes on a tray and roast for 20 minutes. Take them out, toss, then roast another 15–20 minutes until crispy outside and fluffy inside. Cool and store in the fridge.

  2. 2

Prep ahead — air-fry the tofu: toss the cubed tofu with the nutritional yeast and Frank's until every piece is coated. Roast or air-fry at 425°F for ~20 minutes, flipping halfway, until firm and crisp at the edges. Cool and store in the fridge. (You can roast the potatoes and tofu on the same tray to save time.)

  3. 3

Prep ahead — blend the dressing: blend all dressing ingredients until completely smooth, adding more soy milk to reach a pourable, creamy consistency. Store in a jar in the fridge for up to 5 days.

  4. 4

When you're hungry — reheat the potatoes and tofu in the air fryer or oven (a few minutes at 400°F) until hot and crispy again.

  5. 5

Chop the kale or romaine, cucumber, and cherry tomatoes into a big bowl. Toss with a few spoonfuls of the dressing.

  6. 6

Top with the warm potatoes and tofu, and eat right away — that warm-on-cold contrast is the whole point.

Notes & tips

  • Roast the potatoes and tofu on one tray to save time and dishes.
  • The dressing keeps for 5 days, so make a batch and the salad comes together in about 10 minutes.
